These are approximate
cuts/quantities for 1/8th beef.
An eighth of beef fills two 'Banana Boxes' (the kind
you may see in a grocery store) that are 20"L x
16"W x 9" D. This amount of beef
would fit in the freezer compartment of a
refrigerator as long as there wasn't much else in
there.
All beef is sold as hanging weight (weight before
butchering). Price is determined by this weight.
They dress out (net meat) to approximately 70%. The
eighths are about 105 - 110 lbs hanging weight so
the net meat after processing is roughly 74 - 77
lbs. This includes cutting and wrapping.
Meat is film wrapped in small trays.
We have found that the trays allow for easier
storing and help prevent meat from falling in the
freezer when a package is removed. Meat
wrapped like this can be safely stored for about a
year. All packages are labeled by contents.
Steaks are 3/4 inches thick and are individually
wrapped.
We can do special cuts or thicknesses at no extra
charge but the minimum order is a quarter beef.
We can only do this at the time of shipping so there
may be an extra wait involved.
Ground beef is packaged in a 1-lb plastic tube
allowing for faster thawing. There is no added fat
to the ground beef. An eighth also includes
one or two packages of pre-formed beef patties.
There are four to a package.
